I am always looking for vegetarian options because we don't cook meat at home. Wes is totally vegetarian, Gerry will eat some meat, and I sometimes eat chicken or turkey, but that is becoming less and less frequent. I get a really bad upset somach from red meat and now other meats are starting to do the same thing, so it's not worth the bother. Wesley was vegetarian even before she was born. When I was pregnant with her I got really sick if I ate meat, and she wouldn't eat any meat product even as a baby with the baby foods. She hates the smell of flesh cooking (well that's what it is after all, right?) I used to love a good steak, but no more.
OK, I'm heading in to the studio and not coming out until I have some mugs made. there is a new design swimming around in my head that needs to come out, bye!!
Maple Syrup Salad Dressing
Susan's Maple Syrup Dressing:
Whisk together 1/3 cup maple syrup, 1/3 cup balsamic vinegar, 2 T Dijon mustard and 2/3 cup olive oil.

We aren't vegetarians (I used to be), but we raise our own meat. I know that bothers a lot of people, but it truly does make a difference in the quality of life of our animals and our connections to our food. I like to think we consume more compassionately and throughtfully, too. We definitely don't waste food, because we know exactly what went in to it.
Now, that also leads to little situations like the one where I can't bring myself to kill the turkeys we bought for Thanksgiving. Those guys have names and are now like members of the family! :)
